Pork Salami

6oz salami handcrafted by our friends at Adagio Salumi in Austin, TX. These small-batch salami are made from hogs (including those we raise in Fredericksburg) that live on and forage in open pastures. No artificial ingredients. No nitrites or nitrates (except those naturally occurring in celery powder). No hormones. Available flavors are below, and please choose your selection upon ordering. 

Felina - red wine and garlic.

Soppressata - red wine and garlic. This comes pre-sliced.

Bomba - coarse chopped pork with Calabrian chilis.

Chorizo - smoked paprika and cream sherry. This comes pre-sliced. 

Il Pequin - chili pequin, garlic and red wine. This comes pre-sliced.

Pistacchio - pistachios, peppers and anise.
